Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
--Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Facility was unable to correct this violation at the time of inspection. Facility will run all plates, utensils and food contact surfaces through sanitizer prior to reopening or preparing food. REPEAT VIOLATION FROM 9/17/12. Facility contacted company that services the machine at the time of inspection. Facility requested a reinspection later in the day to retest dishwasher.
