    --Observed a sticky debris ( adhesive ) on the inside of the cleaned plastic insert tubs stored on the shelf above the three bowl sink. Provide a smooth easily cleanable surface.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    --The quaternary ammonia concentration in the sanitizing solution of the 3-bay ware wash sink was less than 100 ppm, rather than 150 to 400 ppm as stated on the manufacturer's use directions. PIC changed the sanitizer container during this inspection and the sanitizer conc. is approx. 200 ppm. Food contact items were re-sanitized. Corrected.
  • Storing Clean Items (46.774)
    --Observed clean food equipment, plastic insert tubs on the shelf above the three bowl sink are stored wet in a manner that does not allow for draining and/or air drying (wet nesting).
