--A plastic container to dispense the ice was observed stored in the ice at the ice machine. Only a scoop with a handle may be used to dispense the ice. If the scoop is stored in the ice, it must be stored with the handle out of the product.
- Hot Holding Potentially Hazardous Foods (46.385(a)(1))
--Beans were found sitting in a pot on top of the hot holding unit at 96 degrees F. All food in hot holding must be maintained at or above 135 degrees F. The food was less than two hours our of temperature and was ordered reheated to above 165 degrees F. In the future, put the beans into the hot holding unit and not in a pot on top of the unit.
