--Buildup of stagnant liquids, food residue under front ramp panel of proof box units. Ramp panels removed, and cleaning initiated during inspection. Buildup of moisture and slime-like substance on back bottom panel of same proof boxes.

--Buildup of frozen condensate on interior surfaces of retail "DiRussos" sausage freezer. Defrost as needed. Buildup of frozen condensate on bottom left corner of front produce cooler evaporation unit. Defrost before any issues with melt water onto food occur.
