--Food that was stored in the bottom unit of the deli case was uncovered. All food products are to be covered at all times. Cover food.
- Sanitization of equipment and utensils (46.731)
--The 3 bay sink in the rear hot food prep area is not being used. The sink was covered with a large cutting board. the cutting board is to be removed and placed on an NSF approved table that is smooth and easily clean able. The sink is then to be set up properly to wash rinse and sanitize. The sink is to be kept in this condition at all times.
- Identification of Content on Food Storage Containers (46.282)
--Sofril food ingredient storage containers, in the reach in refrigerator area, is not labeled with the common name of the food.This item may not be offered for sale to general public until all containers are correctly labels. Items were removed from this area and will only be used in food production by the staff in food production.
- In-Use Utensils & Between Use Storage (46.302)
--In the front service area the serving utensils were observed being stored in room temperature water only. These items need to be washed -rinsed-sanitized and then properly stored between use. The units are to be cleaned and kept dry between use and not allowed to sit in standing water.
- Light Bulb Protective Shielding (46.922(a))
--The light bulb that is above the main hot food production area is in need of shielding. An approved glass bulb shield is required for this light. Install shield.
- Insect Control Device Design & Installation (46.922(c))
--An insect control device located in deli area with potential to contaminate food, equipment, and / or utensils. Remove flyb strip from above deli case.
