--Raw chicken, located in the walk-in cooler, was being stored over rice and sprouts. Raw shrimp, also being stored in the walk-in cooler, was being stored next to cooked shrimp. Store all raw meat and fish separate from, below all ready-to-eat foods, such as cooked shrimp and rice.
- Thawing Potentially Hazardous Food (46.383)
--Chicken was being thawed in standing water. Do not thaw frozen food in standing water. Thaw all food in the refrigerator or under running water that is being maintained at 70 degrees F.
- Labeling (46.422)
--Containers of beverages, stored in the self-serve cooler in the dining area, are not labeled with the beverage name or a list of ingredients. Food and beverages offered for self service need to be labeled with the name of the food/beverage and its ingredients. Label these beverages.
- Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
--The blade of the can opener is dirty. Clean and sanitize the blade of the can opener.
- Storing Clean Items (46.774)
--Oven trays are being stored on the floor under the 3-bay sink. Do not store equipment or utensils under the 3-bay sink or on the floor. Store all utensils and equipment at least 6 inches off of the ground and in a clean, dry area.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--The floors under the cooking line and throughout the facility are dirty. There is an accumulation of grease on the Pepsi cooler and on the grey food storage containers. There is an accumulation of grease on the wall behind the fryer. Clean the floors throughout the facility, the wall behind the fryer, the Pepsi cooler and the food storage containers.
