--Plastic food insert tubs on the shelf above the three bowl sink and a pizza slicer in the clean utensil container, a food contact surface, were observed to have food residue and were not clean to sight and touch. Items were pulled and washed and will be replaced as needed. Reviewed with the PIC. Corrected.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Non-food contact surfaces are not cleaned at a frequency to preclude accumulation of dirt and food debris. Items include the exterior of the dough roller, the metal shelves above the three bowl sink and the blue shelves by the dough roller. Clean and maintain the above items.

--Improper use of the three bowl sink. Facility is washing, sanitizing, rinsing instead of WASH, RINSE, SANITIZE food contact items. Proper method reviewed with the PIC and employee. Sink refilled correctly. Corrected.

--Observed storing clean food equipment, plastic insert tubs on the shelf above the three bowl sink while wet, and not allowing time for draining and/or air-drying.

--Observed chipped/cracked floor tiles throughout the food prep. area.

--Food facility operator failed to post an original, valid Food Employee Certification in a location conspicuous to the consumer.
