--Kens texas petal sauce was being held at 55*f for an unknown amount of time instead of being held at 41*f or less, Product was removed and discarded during this visit. All other food products that were being stored in this cooler had statement that read hold under refrigeration for quality, so these items were all moved to the walk in-cooler. Manager was also informed not to use this cooler until it is holding foods at proper temperatures.
- Preventing Cross-Contamination of Packaged and Unpackaged Food by Separation, Packaging & Segregation (46.281)
--Firm had in the top area of the sandwich unit raw fish in the back and potatoes in the front, this could cause cross contamination if the juices from the raw fish would drip into the pan of potatoes when reaching to the back to get the fish. Raw fish was changed with the potatoes during this visit.
- Cutting Surfaces Maintained (46.672)
--White cutting boards thru out the kitchen area have areas of deep cuts, these cuts prevent board from being properly cleaned and sanitized.
- Surface Characteristics of Indoor Areas of Food Facilities (46.901)
--Caulking on the walls behind the soup area, dishwasher area, and back hand wash sink area in the front cooking line.
