    --The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    --Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required.
  • Maintenance & Operation of Manual Warewashing Equipment (46.676(a)-(c))
    --The water temperature of the wash compartment of the manual ware washing equipment was 50 °F, rather than not less than 110°F, as required. This was temporarily corrected.
  • Hot Water Sanitization Temperature, & Chemical Sanitizing Using Detergent-Sanitizers in Manual Warewashing (46.676(d)(e))
    --Hot water with a minimum temperature of 110 degrees F not provided to manual 3-compartment sink for ware washing. Hot water temperature was 50 degrees F. Hot water from coffee maker was provided to ware wash sinks for manual ware washing at time of inspection.
  • Availability, Capacity & Pressure of Water (46.805)
    --Food facility hot water heater is not producing enough hot water to supply hand and ware wash sinks at the time of this inspection. Hot water temperature was noted at 50 degrees F.
  • Handwashing Facility Installation (46.822(b))
    --The hand wash sinks located in the kitchen and rest room areas do not have water at a temperature of at least 100°F. Hot water heater not working due to leaking roof. Temporary insulated containers of hot water with a minimum temperature of 100 degrees F were provided in the kitchen and rest room areas. Water was noted at 50 degrees F during this inspection.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Roof is leaking water in back kitchen door area, front counter cafe area, and main kitchen area, and is in need of repair. Areas were assessed during this inspection-no potential for the contamination of food product was observed at this time.
