--Some luncheon meats and salads were held above 41 deg. F. These products were removed or will be removed by PIC for disposal within four hours of the elevated temperatures.
Cooling Potentially Hazardous Food (46.384(a)(b))
--Chicken 'marked'-charred on surface on a gill. It is then marinated, and baked to finish. The product in marination had internal temperature of 44 deg. F. It was within the walk-in cooler, and PIC stated to be out for nearly an hour in preparation.
Cooling, Heating, & Holding Capacities (46.611)
--Up to five (5) cold hold units found to be holding foods above 41 deg. F. Products are still considered wholesome for up to four hours
Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--Ceiling tiles missing in the cafe area above the freezer / deep fryers, and need replaced. The heat exchanger associated with the freezer needs cleaned.
