--The temperature in the bottom compartment of the Bain Marie was measured at approximately 45F. Tomatoes stored in the top portion of the Bain Marie were measured at approximately 50F-52F. The thermostat was lowered and ice was placed around all containers in the top portion. The ambient temperature was measured at 40F after the adjustment.
