    --No chlorine sanitizer test strips available for DAILY checking of low temp dishmachine, sanitizer OK today, 50 ppm on clean dish. Ask your serviceman/chemical supplier for test strips.
  • Cleaning Frequency, Cleaning Agents & Clean Solutions for Mechanical or Manual Warewashing Equipment (46.674(a)-(c))
    --Same issue with the dried food residue, soap build up on interior top of dishmachine access doors, clean as needed.
  • Storing Clean Items (46.774)
    --Unclean storage containers found stacked together on kitchen shelves. Need to go through all those containers and lids, discard any/all that can't be cleaned/stored clean.
  • 3 C.S, 6501-6510 (FEC)
    --Food facility operator failed to post an original, valid Food Employee Certification in a location conspicuous to the consumer. All previously certified food handler certificates have expired. Tim and Shelly Mathews are scheduled to take a class in February. Once completed, post at least one certificate with your food license.
