    --Observed food for the hibachi, cooling at or 65-70F., which is not a proper cooling method. Minor ice water was found under the pans. Repeat in 2014.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Hibachi meats, sushi and cut vegetables at the cold bar was not falling quickly enough to maintain 41F or less. Ice was floating inside bins but was not effective. Area was recently stocked. Repeat in 2009, 2013-14.
  • Wiping Cloths Use Limitations (46.304)
    --Observed wet wiping cloths in hibachi area, not being stored in sanitizer solution between uses. Repeat in 2009, 2011 & 2014.
