--Upon interviewing a staff, it was confirmed they have not been trained in proper commercial warewashing and are not sanitizing equipment at the three compartment sink. It is the CFM's responsibility to train staff to properly wash, rinse, sanitize and air dry dishware. Sanitizer (QAC) was available. Review with all staff proper warewashing practices. Correct immediately.
