    --In the meat display case there appears to be at least two types of cheese with no labels. Provide labels. Must have name of product, where produced, list of ingredients and date. Correct and maintain.
  • Materials for Surfaces that are Nonfood-Contact Surfaces (46.522)
    --Two of the back sliding glass doors for the meat display case are cracked. Tape is being used on one of the two doors. Have the glass replaced for a surface that is smooth, well maintained, and easy to clean. The doors have two layers of glass. The two cracked pieces of glass are on the outside of the door.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --Observed The following equipment with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Clean and maintain. 1. Inside the ice machine, chute. 2. Inside the inside of the Continental freezer next to the chicken display refrigerator. 3. Basement freezer holding beef needs to be defrosted.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --The following must be addressed. Clean and maintain. 1. Floor in the bakery room, especially on the left side and around the mixer. 2. Basement - remove the cardboard from the area where pig skins used to hang.
  • Lighting Intensity (46.943)
    --Bulbs are burned out inside the hood. For the proper amount of lighting, replace the bulbs.
