--Interior temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible. Maintain interior thermometers in all cold hold units.

--The cooking exhaust hood is not provided with a sticker indicating the last cleaning / service. Please provide a sticker indicating the date the cooking exhaust was last cleaned and serviced. Please contact an outside / professional hood cleaning company if you have not done so already.

--Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Please obtain Chlorine test strips or use sanitabs as the facility has qauternary ammmonia test strips but using chlorine solution for sanitizing methods.

- Certified Food Manager (CFM)
--The food facility does not maintain Certified Food Manager records as required. A prometric food course certificate from Virginia was submitted to the Department dated January 30 2012 and deemed acceptable. Magdaleno Garcia - Sanchez will be the CCHD Certified Food Manager. A CCHD CFM application was mailed to Mr. Garcia -Sanchez July 1st. Please complete application and submit to Department.
