--Severely dented, swollen, distressed canned items observed in the dry storage area intended for use or sale in the food facility. These cans must be clearly separated from the cans intended for sale if returning to vendor for credit. Otherwise, they must be voluntarily discarded. Inspect deliveries upon arrival for dented or swollen cans.
- Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
--Facility is not putting reference dates on prepared foods on a consistent basis. All foods prepared and held more than 24 hours must have a reference date.
- Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
--Foil being used to line the broiler had excessive food debris build-up on it. Change out at a rate necessary to preclude the accumulation of food debris.
- Light Bulb Protective Shielding (46.922(a))
--Lights are not shielded or shatter proof over the food prep area in the kitchen. Provide immediately.
- Equipment in Good Repair & Proper Adjustment (46.671)
--Damaged door gasket on the walk-in cooler door. Replace.
- Cutting Surfaces Maintained (46.672)
--Observed deeply scored and stained cutting boards not resurfaced or discarded as required.
- Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
--Soap was not available at the handwash sink in the area near the mop sink. This was corrected on site. Keep hand sinks supplied at all times with single-service soap and paper towels, as well as hot water in excess of 100F.
- Lighting Intensity (46.943)
--Lights out under the cook's line hood. Repair or replace.
- Plumbing Facilities in Good Repair, Cross Connection Prohibited, Scheduled Inspections, Cleaning Water Reservoirs (46.825(b)-(e))
--Excessively slow draining observed from the women's restroom hand sink. Clean and keep clear.
- Certified Food Manager (CFM)
--No valid Certified Food Manager (CFM) certificate on site. Facility stated that they had a valid certificate holder but could not provide a certificate or proof of certificate. The facility must submit reciprocity immediately or provide proof of enrollment in an approved course. EHS will follow up with the certification process.
