    --Commercially processed ready to eat foods (deli meats and cheeses) located in the deli case more than 48 hours is not being marked with the date opened. This also pertains dating the sell by date of the commercial sandwiches in this case (14 days from thawing). The regulations were reviewed and date implementation was done during the inspection.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    --Noted the chlorine concentration in the wiping cloth buckets was greater than 100 ppm and not 50-100 ppm as required. The solutions were remade correctly during the inspection.
