--Staff setting frozen fish out on counter to thaw overnight, WRONG, must be done under refrigeration, under cool running water, in a microwave, or as part of the cooking process. Change your procedures immediately.
- Eating, Drinking or Using Tobacco (46.151(a))
--Two ash trays with either ashes or cigarette butts found in kitchen by handwash sink. NO smoking in food areas, all removed during inspection.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Fish fillets sitting out on counter had product temperatures of 57*-60*F, product sat out overnight and had been out of temperature for more than four (4) hours, 10-pounds of fillets denatured and discarded during inspection. See below.
- Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
--Handwash sink in kitchen lacked hand soap (two bottles of hand sanitizer confused with soap), paper towels in a holder, and a reminder sign for kitchen staff to wash hands. Found soap and paper towels so as to wash my hands before inspection.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Buildup of dried food, rust-colored staining, and moisture on bottom side of sandwich prep unit's cutting board. Cutting board not being removed for cleaning at end of the day's use (top side every four hours of use). Board removed for cleaning.
