--Observed cut vegetables, fruits being cooled in refrigerator cooler in larger epoxy containers / trays, which does not meet accurate capacity recommendations.

--Cut vegetables, juices, and cup cheeses were held at 47-56 °F, in the Traulsen reach-in cooler, rather than 41°F or below as required.Temperature log sheets verify temperatures above 41F since the routine inspection.
- Cooling, Heating, & Holding Capacities (46.611)
--Food facility has insufficient cooling equipment [Traulsen unit] to cool foods quickly. This double sided unit could not meet cooling requirements for the amount of food stored and the tray size.
- Preventing Contamination from Ice Used as a Coolant (46.286)
--Ice still found on ceiling, on the floor and along the refrigerator door and may become a source of contamination. All boxes were closed. Repeat in 2008, 2011-2014.
- Time as a Public Health Control for Potentially Hazardous Foods (46.385(c))
--Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food. Cut [TCS] foods in the Traulsen cooler shall be date and time marked every 2 to 4-hours, cycled to another cooling unit or used, with records maintained.

--Plastic wrap was used to close a gap in the partition steel of the Hobart CRS86A Dish machine, however this plastic wrap is melting, due to heat.
