    --Scoop being stored in the ice with handle buried beneath the ice.

    --Commercially processed food [cheese] was only heated to 75 °F in the Nesco roaster, before being placed in the steam table and not to 135°F for hot holding as required.
  • Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
    --The color chart for the QUAT sanitizer has been exposed to sunlight and has bleached out the color chart. Comparisons for sanitizer concentrations, can not be effectively interpreted, if allowed to be used.
  • Handwashing Facility Installation (46.822(b))
    --The hand-wash sink located in the prep area does not have water at a temperature of at least 100°F. Provided.
