--Observed a box of Delallo noodles stored directly on the floor in the rear storage area, rather than 6 inches off of the floor as required.
- Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
--Commercially processed ready to eat food, ( meats and cheeses ) located in the front deli case, and held more than 48 hours, are not being marked with the date it was opened. Reviewed requirements with the PIC. Also PIC is not aware of how long after the cold sandwiches are placed in the Delfield cooler until they need to be discarded. Review date requirements with the product manufacturer / distributors. Corrected.
- Materials for Surfaces that are Nonfood-Contact Surfaces (46.522)
--Observed several chipped floor tiles in the walk in cooler.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Observed a build up of debris on the floor of the walk in cooler. Clean and maintain.
- Sanitization of equipment and utensils (46.731)
--PIC is not aware of the proper use of the three bowl sink. WASH, RINSE, SANITIZE all food contact items. Reviewed with the PIC. Corrected.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--Observed clutter ( damaged drink bottles, boxes, paint cans, equipment, etc. ) on the floor in the rear storage area. Also observed a clutter of food and non-food items in the three bowl sink area. Organize and discard unneeded items in both the above areas.

--Food facility operator failed to post an original, valid Food Employee Certification in a location conspicuous to the consumer.
