--Uncovered raw chicken was observed being stored next to uncovered raw onions in the stainless steel refrigerator. Store all raw meat separate from ready-to-eat foods, such as onions. Cover all food in storage.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Food, such as burritos, empanadas and refried beans, located in the two display coolers is not being maintained at or below 41 degrees F. Food that was out of temperature for more than 4 hours was discarded. All other food was moved into another unit.
- Cooling Methods & Food Containers Used/Arranged (46.384(c)(d))
--Two containers of beans were observed cooling at room temperature. Do not cool food at room temperature. Cool food with an ice wand, in an ice bath or in shallow pans in a refrigerator.
- Cooling, Heating, & Holding Capacities (46.611)
--The two front display cases are not capable of maintaining food temperatures at or below 41 degrees F. Service these units. Do not use these units until they can maintain food at or be 41 degrees F.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--Small open containers of dried hot peppers were observed on the floor under equipment and prep tables. The owner of the facility explained that they were being used to deter pests. Do not put open containers of food on the floor of the facility. Remove the hot peppers. Use glue traps or professional extermination to deter pests.

--This facility does not have an employee who holds a valid food employee certificate. Assure at least one employee obtains certification through one of the following: ServSafe, Prometric or National Registry for Food Safety Professionals.
