--Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods (packets of whipped butter) without written procedures or documentation to verify disposition of food. PIC stated that packets of whipped butter are placed at the breakfast toast station at 6:30am and are discarded at 10:30am.
Accuracy of Temperature Measuring Devices for Ambient Air and Water (46.562)
--Ambient air temperature measuring device for ensuring proper food storage in the "true" brand cold hold unit, in sales floor area, is not accurate to +/- 3°F. The device had a reading of 20°F, rather than 35°F. Air gauge thermometer was replaced with a properly calibrated thermometer during the inspection, thank you.
