All food handlers, who work in a non-restaurant, are required to take a 2 hour online training course by January 1, 2016. The information for all classes offered by various companies can be found on our website www.pcchd.org On the right side of the screen, under "Recently Updated Pages", click on "Food Protection Prevention". This will lead you to the page that has all links for all classes. Once each food handler has their certificate, print it out and have it available for any inspections beginning in 2016. Non-paid volunteers are not required to have this training.

    1) The light near the vent hood in the kitchen is burnt out. 2) The light inside the True cooler in the kitchen is burnt out. Maintain adequate lighting. Replace the bulbs.

    Counter top soiled near hand sink and the middle island.
    Clean and sanitize routinely and before conducting any food perpetration.
    Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.
  • Floors properly constructed, clean, drained
    Flour soiled in kitchen area near door and under the window with the window air in it.
    Maintain clean floors.
    Floors, floor coverings, mats, and duckboard shall be maintained clean.

Recheck was conducted due to presence of a mouse during last inspection. During recheck inspection, there is no presence of mice or other pests or rodents at this time. Establishment can continue food servicing without restrictions. Park manager Tom Miller states that more traps have been provided throughout the building, and they continue to do their own pest and rodent
control.

Manager will submit paperwork for outside variance on 9/25/13.

    Live mouse found in out-of-service deep freezer in kitchen.
    Effective measures to minimize the presence of rodents and flies, roaches, and other insects on the premises shall be utilized.

Utilize bleach sanitizer solution.

Kitchen is mostly being used for serving prepackaged food and drinks. Stove and other kitchenware are not being utilized.

Routine septic system check done the week of 6/10/13. Ensure septic records are maintained.
  • Wiping cloths clean, used properly, stored
    Wet towels found in cabinet near dish sink.
    Corrected by placing wet towels in waste basket.
    Moist cloths or sponges used for wiping food spills on kitchenware and food-contact surfaces shall be stored in a sanitizing solution between uses.
  • Non-food contact surfaces clean
    The following items are dusty: 1. counter tops, 2.stove, 3.interior of cabinets
    Clean, sanitize, and maintain cleanliness of non-food contact surfaces.
    Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.

HACCP: Maintainance of septic system.  Please make sure that chlorine tablets are added to the chlorine feeder tube routinely, especially during periods of heavy use.  Also, a vent stack has broken off at the ground surface.  It is recommended that a screen be placed over the vent stack so animals do not enter the system.

Facility has recently hooked up to public water supply.

    Utensils stored everywhich way in drawer near sink.
    Store utensils with handles in one direction to protect food contact surfaces.

    Obseved no trash can by dish wash hand sink and paper towel by kitchen hand sink.
    Provide paper towels and accessible trash container for all hand sinks.
  • Critical: Presence of insects/rodents. Animals prohibited
    Obseved ants to the right of kitchen hand sink against wall.
    Effective measures to minimize the presence of rodents and flies, roaches, and other insects on the premises shall be utilized.
  • Critical: Outer openings protected from insects, rodent proof
    Observed kick plate for rear door, screen for rear door and screen for exhaust fan by dish wash area not providing a tight seal from the outside.
    Openings to the outside shall be effectively protected against the entrance of rodents and insects by tight fitting self-closing doors, closed windows, screening, controlled air currents or other effective means. Screening material shall not be less than 16 meshes to the inch.Openings to the outside shall be tight fitting and self-closing.
    Repair door kick plate and ensure screening is less than 16 meshes to the inch and in good repair.
  • Lighting provided as required. Fixtures shielded
    Observed no light for dry storage area and no shield for light above dish washer.
    Provide light and shield for the lights.

Spoke to Tom, head of Sommer Park on 11/21/11, said that they are open from the 1st of May to the end of October.
