  • Employee cleaned counter and tabletop with wiping cloth then did not wash hands prior to gloving/food handling, another employee picked up trash from floor, then returned to handling clean wares without washing hands. **Ensure all employees handling food and other items, such as clean wares wash hands properly after any task that contaminates hands.
  • Some prepared potentially hazardous foods marked with a 'use by' date, others such as salami (dated 6/29/10), cheese (dated 7/1/10), cooked meats were marked by prep date. **Ensure to mark all prepared potentially hazardous foods if not used within 24hrs with a 'use by' date; includes all foods prepared/served to residents even if the resident provided the food.
  • Handsink in dish room was not accessible due to stacked dishracks placed around the sink. **Relocate dishracks so that the sink is fully accessible and remove plant placed inside sink.
