  • 229.164 (o) (4) (D) Raw Shell Eggs. Raw shelled eggs on prep-table at 74 degrees. Raw shelled eggs must be kept at 45 degrees or colder.
  • 229.163 (h) (8) before gloves. Observe staff members remove gloves, perform a few tasks, other than food handling. Then return to work station, put on new gloves, and begin working with food. Staff must wash hands prior to putting on new pair of gloves. Also, insure that staff members wash their hands, prior to scooping out ice from ice machine.
  • Establishment must always have at least one person on duty with a Food Managers Certification. Manager on duty, did not have a copy of certification available for view.
  • Ch 13, Art II, section 13-26 Display permit. Current copy of inspection report must be posted for customer view. Report currently posted, is not current, but instead from several inspections ago.

DIGITAL THERMOMETER FOR THE WALKIN COOLER ALSO DISPLAYED TEMPERATURE RANGES BETWEEN 45F TO 50F. HAVE THE WALKIN COOLER SERVICED SO THAT A TEMPERATURE OF 41F OR LESS IS MAINTAINED. MONITOR AND MOVE ALL POTENTIALLY HAZARDOUS FOODS OUT OF THE WALKIN COOLER, IF NECESSARY, TO MAINTAIN FOOD PRODUCT TEMPERATURES OF 41F OR LOWER. MANAGER STATED HE WILL NOTIFY A SERVICE TECHNICIAN AND COMPLY WITH FOOD TEMPERATURE REQUIRMENTS.
  • STORE ALL CHEMICALS SEPARATE FROM FOOD PRODUCTS AND SINGLE SERVICE ITEMS. OBSERVED TWO CHEMICAL SPRAY BOTTLES BEING STORED ON LOWER SHELF NEXT TO SINGLE SERVICE LIDS BY FRONT COUNTER
