- 229.163 (h) (8) before gloves. Observe staff members remove gloves, perform a few tasks, other than food handling. Then return to work station, put on new gloves, and begin working with food. Staff must wash hands prior to putting on new pair of gloves. Also, insure that staff members wash their hands, prior to scooping out ice from ice machine.
- Establishment must always have at least one person on duty with a Food Managers Certification. Manager on duty, did not have a copy of certification available for view.
