Cold hold unit for cut vegetables/fruits like onions and tomatoes must maintain product temperature of 41 degrees F. or below at all times. Unit temp was at 47 degrees F. Cut items placed on ice and other items moved to a different cooler during inspection.
Cook was observed handling flour tortillas with bare hands, while preparing plates for customers, without using a barrier like gloves, utensils, or deli paper/foil. No bare hand contact procudure on hand for review.

Sausage pieces were observed at a temperature of 49 degrees F. inside the cold hold unit, all phf foods should be held at 41 degrees F. or below - (according to the cook they had been in unit for about 45 minutes) - corrected on site by placing container of sausage in freezer unit for rapid cool down
An open can of soda was observed on top shelf above two microwaves located in the kitchen area. Make sure all employee drinks have a lid and straw and stored away from food prep areas.
