  • CLEAN BACK ROOM AREAS BEHIND WALK-IN COOLERS. MAINTAIN AREA.
  • CLEAN WALL BEHIND 3 COMPARTMENT SINK AND RECAULK JUNCTURE OF SINK AND WALL.
  • Cloths in use were damp, but had no sanitizer pail to keep them sanitized. Provide sanitizer pail for wiping cloths.
  • DISCONTINUE USING SODA CRATES AS SHELVES. SODA CRATES AS NOT APPROVED SHELVES. PROVIDE NSF APPROVED EQUIPMENT.
  • Discontinue storing pans, etc. on the rear hand sink. It must be accessible for handwashing at all times.
  • MEATBALLS FOUND AT 119*F HOT HOLD. REHEAT TO 165*F AND MAINTAIN ABOVE 140*F. PRODUCT REHEATED TO 171*F. MONITOR AS NEEDED.
  • Mop was stored on floor; hang them up so they dry.
  • OBSERVED EMPLOYEE CLOTHING (SHIRTS) LAYING ON TUNA BOXES ON SHELVING. STORE ALL EMPLOYEE CLOTHING AND BELONGINGS SEPARATE FROM ALL FOOD AND EQUIPMENT.
  • PROVIDE A FINGER NAIL BRUSH AT HANDSINK NEAR 3 COMPARTMENT SINK.
  • PROVIDE THERMOMETER IN DISPLAY COOLER.
  • QUAT SOLUTION AT 0 PPM IN SPRAY BOTTLE. MAINTIAN BETWEEN 200 AND 400 PPM FOR QUAT SOLUTION. THIS WAS CORRECTED TO 30 PPM QUAT SOLUTION.
  • Quat sanitizer in the sink and the spray bottle were too weak, although it was not zero. Maintain at proper level. Check regularly.
  • Refinish the rusty top of the grease trap. Repair the damaged door sill of the walk-in cooler.
  • Repair the leak under the three compartment sink.
  • Replace the missing light cover for ceiling light.
  • Replace the missing nail brush at the hand sink.
  • Replace the missing thermometer in the undercounter refrigerator.
  • Set soup warmer control hotter.
  • Some of the cutting boards at the prep counter were badly cut and need to replaced with smooth ones.
  • THERE WAS NO FINGERNAIL BRUSH AT FRONT HANDSINK. PROVIDE A NAILBRUSH FOR EMPLOYEE USE.
  • The following need cleaning: The shelves under the work table. The door seals of the undercounter refrigerator.
  • The greasy ceiling behind the oven needs cleaning.
  • The plastic utensil storage bins needed cleaning.
  • YOU ARE REQUIRED TO HAVE AT LEAST ONE CERTIFIED FOOD MANAGER AT THE RESTAURANT. SUBMIT A COPY OF YOUR NEW CERTIFIED MANAGER'S CERTIFICATE TO THIS OFFICE.
