[2] Food contact surfaces of equipment and utensils clean; free of abrasives; detergents Observed mold growing the nozzle of the speed gun. Need to clean and sanitize to prevent contamination. Observed mold growing in the ice shoot of the ice machine. Need to clean and sanitize to prevent contamination.
[2] Accurate thermometers; chemical test kits provided; gauge cock (1/4" IPS Valve) Test strips were not available to staff but they were able how to make a sanitizer solution in the 3 compartment sink. Solution was >200 ppm Cl; recommend maintaining between 50-100 ppm Cl.
[1] Installed; maintained Need to install mop sink. Contact said they are remodeling the back room and will install a mop sink. Water will be dumped into floor drain until installed. If hose attached to hot water heater is used to get water for mop bucket; a vacuum breaker need to be installed or hose must be stored off ground to prevent back siphonage if drains back up to prevent cross contamination.
