An employee on the cook line was observed touching/preparing a ready to eat tomato with bare hands. The east side faucet on the kitchen three-compartment sink lacked hot water. The bar dump sink lacked cold water. The outside patio hand sink lacked soap. The door gasket was torn on the dessert cold-top refrigerator on the cook line. The door gasket was torn on the crab refrigerator bottom door on the cook line. The door gasket was torn on the main walk-in refrigerator door. The side of the cook line fryer was soiled with food debris. The fan guards in the were soiled with food debris in the main walk-in refrigerator. The quat sanitizer bucket on the cook line measured less than 200 ppm quat sanitizer on the test strip. The scoop used in the bulk sugar container was stored with the handle of the scoop in contact with the sugar. In the front of the kitchen, a scoop with no handle was used in the salt bulk container. The bar three-compartment sink faucet was leaking. The patio wait station hand sink was leaking. Several floor cove tiles by the mop sink were cracked. The wall was soiled with food debris by the back kitchen preparation table.
08/01/13 An employee on the cook line was observed handling raw fish and then a spice shaker and then clean utensils and then taking a wiping cloth and wiping off cutting boards without first washing hands.
