The facility was serving undercooked eggs and beef without a consumer advisory.
The hand sink in the front service and kitchen area was being used for purposes other than hand washing as stated by the employee and evidenced by a scrubbing sponge in the hand sink basin.
The person in charge demonstrated a lack of food safety knowledge; they did not know proper cooking temperatures for chicken or ground beef, they stated they were not sanitizing dishes in the manual ware-washing process, and they did not know how to calibrate their probe-type thermometer.
Cut lettuce was 67�°F sitting out on the three-compartment sink drain board.
