    Observation: Replace missing temperature control knob on condiment refrigerator in lobby.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Condiment refrigerator running warm. Salsa measured 55.7 degrees, Super hot sauce measured 55.0 degrees, Hot sauce measured 54.0 degrees,mild sauce measured 55.6 degrees, and jalapenos previously in a hermetically sealed container measured 55.2 degrees. All food was corrected by discarding. Unit shall be repaired to maintain product at 41 degrees or less or prove food is not temperature controlled for safety. Temperature monitoring log aken one hour before inspection temperature was logged as 36 degrees which seems suspect as to whether an accurate temperature was recorded.

    Observation: Oil squeeze bottle not labeled as to contents.
  • Physical facilities maintained in good repair
    Observation: Wall finish loose and cove base damaged by three compartment sink.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation: Provide a thermometer capable of measuring thin foods.
