2-301.14(E) - --The manager was doing dishes in the kitchen. After handling dirty dishes she pulled a rack of clean dishes out of the dishwasher. She grabbed one of the dishes by the handle and turned it. Corrected on Site (COS) - explained to her that she must wash her hands between touching dirty dishes and clean dishes. She said she was just moving the container because it catches water in the top and she was cleaning more dishes prior to putting these clean dishes up. Let her know that she cannot touch the clean dishes without washing her hands first. Dishes re-washed as needed and she washed hands prior to touching them.
KDA_4_60111A - --The meat slicer is sitting on the counter and has not been used today per the kitchen manager. There is a spot with grime and food debris on it on the back of the blade. COS - the kitchen manager cleaned this. The door seal of the GE cooler in the kitchen has a slight accumulation of crumbs/debris in the seal. Letting the kitchen manager know this needs to be cleaned out to prevent food crumb accumulation.
KDA_4_90311B - --There are non-inverted and uncovered mixing bowls on the bottom shelf of the table against the wall (near the dining room side of the kitchen).
KDA_4_90312A - --There are rolls of paper towels store din the cabinet underneath the sink. The paper towels are below the drain line of the sink.
KDA_6_50112A - --There is slight dust/food crumb accumulation on the floor below the large cooler and freezer in the kitchen.
KDA_7_20111B - --There are bottles of Dry Mate and Detergent sitting directly on top of the dishwasher in the kitchen. Let the staff know that the chemicals may not be stored on top of the dishwasher in this manner. They called the dishwasher company today and have this scheduled to be fixed on Monday.
KDA_Defacto - --A single-use plastic parsley container is being reused to store salt. Letting staff know that reusing such containers is not recommended as it is not as durable and may break down more quickly. --True Cooler (Kitchen): Chicken - 35.0 F GE Cooler (Kitchen): Eggs - 40.1 F Kelvinator Cooler 1 (Dining): No PHF items stored inside, only water, tea, margarine Kelvinator Cooler 2 (Dining): Cheese - 42.9 F Peas on the counter - 39.8 F --Two tubes of chlorine test strips, both good through 2017, were provided by the kitchen staff. --Wiping cloth stored in 100ppm chlorine.
