Observed heavy build-up of calcium deposits on all interior surfaces and jets of the mechanical dish machine. Eighty percent of the buildup appeared to be removed with a scraper, but there are still areas (nuts, bolts, attachments) that need attention. Observed dirt and grime on the area around the switches for the mechanical dish washer.

Observed a buildup of old food residue developing on the storage racks in the walk-in cooler.

Observed old food residue on all interior and external parts of the automatic buttering machine. The large ice shield in the front interior of the ice machine was to be roved for the next inspection so a thorough inspection could be performed. Observed old food residue on the drawer tracking and the front area of the 6 drawer refrigeration unit. Observed black mold devepoing on the ice shield of the large ice machine in the back prep area.

Observed static dust on the ceiling heating vents in the back prep area. The dust has now extended onto the ceiling tiles and the walls near the vents. Observed dirt and food debris on the floor at the floor/wall juncture under shelving and under beer kegs in the walk-in cooler and the walk-in freezer.

The handwash sink in the back prep area across from the large ice machine has a paper towel dispenser and was full but the battery powered sensor was not functioning. The Paper towel dispensor was empty at the handwash sink in the front kitchen area.
