Rinse gauge displayed no higher than 97 *F on low temp dishmachine through 5 cycles though data plate specifies that it should be 120*F or more during rinse. Wash temp is adequate(128*) ,chlorine residual is adequate(50 ppm), and duration is adequate(1 min).Manager phoned dishmachine maintenance company during inspection to correct machine. Staff began sanitizing utensils in QAC solution in sink after washing in machine during inspection.Agent will return 12/12/11 to verify correction.If agent can be of help please contact agent at 717-319-0585.Warning letter requested.
