    Observed employee wash a tray and did not sanitize it. The employee washed the tray with soap and water and then placed it on the drainboard to dry. Corrected on site. Always wash all utensils in a sanitizer solution as the last step. If using a QUAT solution, place the items inside the sanitizer solution for at least 1 min and then leave to air dry.
