- Miscellaneous sources of contamination observed.
Food shall be protected from contamination that is not specified under 3717-1-03.2 (A) to (X) Interior surface of ice machine has surface rust on its metal lining. Machine should be turned off/emptied and rust should be removed from metal surfaces. Flaking of rust could serve as a physical contaminant to ice stock.
- Equipment components are not intact, tight or properly adjusted.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Reseal stainless steel counter edge of dishwashing sink to wall surface so area can be properly maintained w/ regards to sanitation and there is no gap present that could allow for the collection of dirt/debris.
- Critical: Observed the air gap between a plumbing fixture and a piece of equipment that was not sufficient to prevent back siphonage of contaminated water.
Provide 2" air gap for drain line for ice machine as per rules to eliminate the potential for the back siphonage of sewage into ice stock in case a sanitary sewer back up would occur. Correct By: 04-Feb-2015

The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Thoroughly clean floor/wall surfaces under and around dish washing sink and adjacent area to address dirt/accumulate.
