- Critical: Equipment food-contact surfaces or utensils are dirty. Observed an excessive build-up of food debris on keepers and a build-up of debris on storage cubby under bakery display cases (containing boxes and plastic cups).
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. Clean above to prevent the contamination of food and food/drink containers.
- Non-food contact surfaces of equipment are dirty. Observed a significant build-up of grease on exterior of fryers. Flour and food debris build-up on exterior of bulk ingredient containers and plastic rolling cart. Excessive build-up of glaze on donut glaze cart.
Nonfood-contact surfaces of equipment shall be kept clean. Clean exterior of fryers, bulk ingredient containers, and equipment to provide a sanitary surface and deter pests.
- Observed a build-up of dirt and debris on floor of walk-in cooler and freezer, and a significant build-up of grease on floor under fryers.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean floors to deter pests.

Observed cob webs on electrical boxes in back prep area, a large accumulation of food debris on the walk in freezer floor, an accumualtion of dust on ceiling and airvents over prep tables in back, an accumulation of food debris in sliding door tracks under donut case in the front display, a large build-up of food debris on the floor along the walls, as well as a build-up in hard to reach places between and around equipment.

- Critical: (CORRECTED AT TIME OF INSPECTION) Observed ice being used for food after it was used as a coolant. Observed milk being stored in the ice machine, and when asked PIC said ice would be used in drinks.
After use as a medium for cooling exterior surfaces of food or equipment, ice may not be used as food. Correct By: 14-Apr-2014
