To prevent foodborne illness, the person in charge shall ensure that employees are properly trained in food safety, including food allergy awareness, as it relates to their assigned duties.
- Critical: TCS foods were not being held at the proper temperature. Observed penne pasta and linguini being held above 41F.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less. Pasta was voluntarily discarded at time of inspection.
- Equipment is not approved by a recognized testing agency. Sterilite containers in walk-in cooler and above prep sink were not food grade containers and not durable to withstand washing, rinsing, and sanitizing within a commercial food service.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. Replace steralite containers with food grade containers to ensure durability and cleanability.
- Non-food contact surfaces of equipment are dirty. Observed area underneath grill top with excessive build up of food debris.
Nonfood-contact surfaces of equipment shall be kept clean.Clean area underneath grill top more frequently and thoroughly.
- Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored.Observed two knives stored in crevices of the prep top cooler which is not a sanitized or easily cleanable surface.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule. Store knives in clean and sanitized knife rack.
- Critical: Observed working containers of poisonous or toxic chemicals that were not properly labeled with the name of the material. Observed pump sprayer underneath hand washing sink unlabeled for contents (pink liquid).
To prevent health hazards, working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Label pump sprayer correctly to prevent misuse of contents.
