Nonfood-contact surfaces of equipment shall be kept clean. Thoroughly clean the exterior and interior of cookline equipment/coolers, hood system, and fan guards to prevent possible contamination and pests.
- Floors, walls, and/or ceilings were not smooth and easily cleanable. [Observed serveral cracked/chipped floor tiles in the kitchen]
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Repair/replace floor tiles in the kitchen to ensure that the flooring is smooth and easily cleanable.
- Observed no service sink or curbed cleaning facility. [Service sink is currently blocked by the two-door freezer]. Per discussion with PIC, mop water is emptied in the three compartment sink.
A service sink or curbed cleaning facility shall be provided as specified under paragraph (I) of rule 3717-1-05.1 of this code. Ensure that utility sink is accessible and discontinue use of three-compartment sink for disposing of mop water.
- Observed unnecessary or nonfunctional items and /or litter on the premises. Non-functional equipment is being stored in the kitchen area.
The premises shall be free of Items that are unnecessary to the operation or maintenance of the FSO or RFE such as equipment that is nonfunctional or no longer used and litter. [Remove non functional equipment/coolers from the kitchen area.]

To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. [Raw foods were stored above ready to eat foods.]
- Critical: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one. [Food items must be marked with the date made, the date frozen, and the date thawed.]
