- Critical: Food employee(s) did not wash hands in situations that specifically require them to do so. -Food employee did not wash hands prior to putting on gloves after handling money until prompted to do so. Hand sink at the front counter was blocked.
To prevent contamination, food employees shall clean their hands and exposed portions of their arms after switching between working with raw food and with ready to eat food
- Critical: The person in charge was unable to demonstrate proper knowledge of food safety and prevention.
Based on the risks inherent to the food operation, during inspections and upon request the person in charge shall demonstrate to the licensor the applicable food safety knowledge at the time of inspection. Correct By: 16-May-2014
- Observed improper storage of food items. -Observed plastic tubs with fries stored directly on the walk-in cooler floor. Observed boxes of food stored directly on the walk-in freezer floor.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. -Provide additional shelves or racks to store food off the floor at all times.
- Critical: The handwashing sink was not easily accessible. -Observed foil and a plastic bag lining the inside of the hand sink at the front counter, along with a sanitizer bucket placed inside the hand sink. Sink was not able to be used.
A handwashing sink shall be maintained so that it is accessible at all times for employee use. -Remove all items from the hand sink. Repair as necessary so that hand sink may be used. Correct By: 19-May-2014
