Critical: (CORRECTED DURING INSPECTION) Food employee(s) did not wash hands in situations that specifically require them to do so. - Deli employee did not wash hands between glove change. Per conversation, employees had not been trained to do so. To prevent contamination, food employees shall clean their hands and exposed portions of their arms after switching between working with raw food and with ready to eat food
Observed improper use and/or maintenance of wiping cloths. - Observed soiled wiping cloths stored on counter surfaces throughout deli. (1) Cloths that are in use for wiping food spills from tableware and carry-out container that occur as food is being served shall be maintained dry and used for no other purpose
Non-food contact surfaces of equipment are dirty. - Observed a build-up of food debris on and under lining of display coolers in deli, and display coolers containing raw chicken and eggs on sales floor. Nonfood-contact surfaces of equipment shall be kept clean. - Replace liners. Clean and sanitize floor of coolers to remove build-up and prevent contamination of food.
Observed a build-up of dirt and debris. - Observed a build-up of debris on floor of walk-in beverage cooler. The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Cold or hot holding equipment did not contain a thermometer, or the thermometer was not correctly placed. A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit. -Provide a thermometer inside each of the walk-in coolers.
Critical: Observed improper display or storage of poisonous or toxic materials offered for retail sale. -Observed antifreeze and motor oil stored above baby food. Automotive aisle is behind the baby aisle overstocked automotive fluids were on the top shelf above the baby food.
