The light intensity in an area where an employee was working with food, utensils or equipment was less than fifty foot candles. The light intensity shall be at least fifty foot candles (five hundred forty lux) at a surface where a food employee is working with food, utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.

Standard Inspection
Critical: TCS foods were not being held at the proper temperature. Garlic butter sauce (Grandioso brand) was being held at room temperature. All TCS foods must be held at 41 F or less. In this case, the product container clearly states "KEEP REFRIGERATED". Operator must store and hold this product at 41 F or less at all times. Operator moved the product to the walk-in cooler.
Observed accumulation of soil residue on nonfood-contact surfaces. Door handles of cooler and warmer equipment were dirty. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
