  • Non-food contact surfaces of equipment are dirty. Observed a build-up of food debris inside unplugged coolers, being used for storage.
    Nonfood-contact surfaces of equipment shall be kept clean. Clean inside of coolers not in use, to provide a sanitary surface and deter pests.
  • The plumbing system was not properly maintained. Faucet (motion activated) in hand sink closest to entrance of women's restroom is not working. Urinal in men's restroom having issues with flushing.
    A plumbing system shall be properly maintained. Repair faucet and men's urinal.
  • Observed light bulbs or heat lamp that were not properly shielded or coated where required. Provide a shield for temporary lighting (light bulbs) in walk-in meat cooler, or repair permanent lighting fixtures.
    Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.

  • Critical: Mashed potatoes in the "Henny Penny" case were not being held at the proper temperature.
    TCS food shall be held at 135°F or above to prevent foodborne illness. Note: Ensure there are no "voids" in the hot case wells so hot air does not escape, and heats foods from below. Corrected: A new batch of mashed potatoes were re-made, and the voids were filled. Correct By: 09-Jul-2014
