  • Observed food employees wearing jewelry on arms or hands during food preparation. -Observed several employees wearing rubber wrist bracelets, wrist watches, etc.
    Food employees may not wear jewelry on their arms or hands, except: -A medical alert bracelet is permitted when a reasonable accommodation is made, such as wearing the bracelet high on the arm or secured in a manner that does not pose a risk to the food but provides emergency medical information if it is needed. -A plain ring such as a wedding band may be worn. -Discontinue wearing anything on the hands, arms, or wrists that are not one of the allowed items listed above.
  • Critical: Observed food that was not properly protected from contamination by separation, packaging, and segregation. -Observed boxed eggs stored above ready to eat food in the walk-in cooler.
    To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. -Store raw product below ready to eat product to prevent possible contamination. -Food was rearranged during inspection.
  • Observed improper use and/or maintenance of wiping cloths. -Observed several wet wiping cloths on countertops and food prep surfaces.

    Cloths that are in use for wiping food spills, counters and other equipment surfaces shall be held between uses in a chemical sanitizer. -During inspection, wiping cloths were removed from counters. -Provide sanitizer buckets to store wet wiping cloths between uses.

    Nonfood-contact surfaces of equipment shall be kept clean. -Clean machine to remove buildup.

    Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule. -During inspection, nozzles were replaced with a set of clean, sanitized nozzles.
  • Observed a build-up of dirt and debris. -Observed food buildup on the walk-in freezer floor. -Observed standing water on the floor in the dry storage area.
    The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
