Observed improper storage of food items. - Observed buckets of ice cream stored directly on floor of walk-in cooler. Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.

Observed buckets of ice cream stored directly on the walk-in freezer floor. Provide shelves or racks to store food off the floor at least 6 inches to prevent possible contamination.
Critical: Observed small flies in the back room. Facility does not use a pest control service. Contact a licensed pest control service to start an integrated pest management program to remove insects. Correct By: 14-Jul-2014
