- Critical: Observed no three-compartment sink for the manual washing, rinsing, and sanitizing of utenils. Facility has no 3-compartment sink to wash coffee pots. Facility is currently using the bathroom sink to wash pots.
A sink with at least three compartments shall be provided for manually washing, rinsing and sanitizing equipment and utensils.
- Equipment food-contact surfaces and utensils were not being sanitized. Facility is not sanitizing the coffee pots.
Equipment food-contact surfaces and utensils shall be sanitized. All utensils and dishware must be washed using the 3 step method of wash-rinse-sanitize.
- Observed light bulbs or heat lamp that were not properly shielded or coated where required. Observed an unshielded lightbulb in the walk in cooler
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.
