- Critical: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. Observed several ready to eat foods (not including cooked chicken wings) in the reach in coolers without proper date marking.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one. Date mark ready to eat foods to ensure a one week rotation.
- Nonfood-contact surfaces are not designed and constructed to allow easy cleaning or maintenance. Observed cardboard used to line shelves that held cooking equipment in the kitchen area.
Nonfood-contact surfaces shall be designed and constructed to allow easy cleaning and to facilitate maintenance. Remove cardboard as it is not a durable or easily cleanable surface..
- Critical: Equipment food-contact surfaces or utensils are dirty. Observed build up of debris on meat slicer in kitchen prep area.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. Thoroughly clean meat slicer to prevent contamination.
- Critical: Observed working containers of poisonous or toxic chemicals that were not properly labeled with the name of the material. Two spray bottles containing clear and blue liquid in the chemical storage area were un-labeled.
To prevent health hazards, working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Label spray bottles to avoid misuse of chemicals.
- Observed an unapproved restricted use pesticide being used. Observed a can of raid stored in the chemical storage area.
To prevent contamination, restricted use pesticides shall meet the requirements specified in 40 C.F.R. 152 Subpart I and be applied as specified under paragraph (C)(3) of this rule. Raid can was discarded by owner and pest control was verified.
