- Critical: Food employee(s) did not wash hands in situations that specifically require them to do so. Did not observe employees washing hands prior to putting gloves on.
To prevent contamination, food employees shall clean their hands and exposed portions of their arms after switching between working with raw food and with ready to eat food
- Observed improper storage of food items. Found multiple items (beer, pop, etc) stored on the floor in both walk in coolers.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
- Critical: TCS foods were not being held at the proper temperature. Pepperoni rolls found on shelf at room temperature without any indication of being a shelf stable product. Provide additional information to CCBH if product remains at room temperature. Food moved to refrigeration.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
- Equipment components are not intact, tight or properly adjusted. Replace seals on freezer drawers to seal properly.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
- The dispensing tube on bulk milk container was not properly cut as required. Observed dispensing line on milk dispenser to be longer than one inch and cut flat. Line cut to less than an inch at a 45 degree angle.
The bulk milk container dispensing tube shall be cut on the diagonal leaving no more than one inch protruding from the chilled dispensing head.
- Non-food contact surfaces of equipment are dirty. Clean ice buildup off ffreezer drawer unit.
Nonfood-contact surfaces of equipment shall be kept clean.
- Outdoor enclosure for refuse, recyclables, or returnables are not durable and cleanable. Remove clutter and clean near grease dumpster.
If used, an outdoor enclosure for refuse, recyclables, or returnables shall be constructed of durable and cleanable materials.
- Observed a build-up of dirt and debris. Observed excess water under cappuccino and excess debris in walk in cooler.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
- The ventilation system was not being properly cleaned or was creating a public health hazard. Clean vents to eliminate dust buildup (ex. - men's room over urinal, women's room over toilet).
Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination. If vented to the outside, ventilation systems may not create a public health hazard or nuisance or unlawful discharge.
